Morning Glory Muffins
Who doesn't love muffins?? They're great to make a large batch and then freeze them to pull out individually, as future breakfasts or snacks. I made these delicious treats this week, that are chock full of fibre and great nutrient dense ingredients, and with a couple of tweaks you could make them a bit lower fat.
For next time, I would use whole wheat flour for half of the flour called for, I also added ground flax seeds and would try using half of the oil it asked for and add apple sauce instead.
